I have seen a lot of Protein Pancakes everywhere, they are really popular, sounds good ( i mean, hey --> Healthy pancakes? The two words rarely get along in the same sentence :) ) , and are also before-workout friendly! So i thought i will also try a recipe of Pancakes. I have looked a lot on internet and thinking how can i make the best, most delicious and don't forget, healthy pancake. As you can imagine i have checked a lot of the recipes and from all of them i took some ingredients :).

At the beginning i tried to check how can i say in English "Quark", then i opened Wikipedia and this is what was mentioning :

**** It is common in the cuisines of German-speaking countries Germany, Austria, Switzerland,

Liechtenstein, Luxembourg), northern Europe (Denmark, Estonia, Finland, Iceland, Latvia, Lithuania,

Norway, Sweden), the Netherlands, Hungary, Belgium, Albania, Israel, Romania, of Slavic peoples , and of Ashkenazim Jews. It is also fairly common in Canada as well as in the northeastern and Midwestern United States.

Dictionaries sometimes translate it as curd cheese, cottage cheese, farmer cheese or junket. In Germany, quark and cottage cheese are considered to be different types of fresh cheese, while in Eastern Europe cottage cheese is usually viewed as a type of quark.

Quark is similar to French fromage blanc, Indian paneer, and the queso fresco/queijo fresco made in the Iberian Peninsula and in some Latin American countries. It is distinct from Italian ricotta because ricotta (Italian "recooked") is made from scalded whey. Quark is somewhat similar to yogurt cheeses such as the South Asian chak(k)a, the Arabic labneh, and the Central Asian suzma or kashk. ******

Now after you figure it out, what Quark it is :), let's get started:

you would need the following:

- Quark 500g -600 g - two oat cups (1 cup ahs aroud 180 mg) - a cup of coconut flour (if you do not have it, there is no problem, you can remove it from the recipe, I used it for the high amount of fiber it has) - Chia seeds - Flaxseed - Sesame seeds - nuts - 2 eggs - Milk - essence of vanilla - the essence of rum (very little because it is intense to taste) - 3 cups of vanilla protein - 1 banana

- a teaspoon of baking powder

- Salt

1. We put oats with coconut flour, baking powder, salt, linseed, sesame, chia and nuts in a blender and start mixing.

2. Add the quark, eggs, banana, vanilla and rum essence, vanilla protein, Milk and mix everything for 3-5 minutes. We stop periodically to clean the vessel walls and continue mixing.

3. Leave the composition for 10 minutes to rest.

4. Put 1-2 tablespoons of composition, depending on the size we want to get, and fry each pancake in a non-stick pan for 1-2 minutes on each side. The pancakes burn very quickly, so I recommend you watch the cooking process carefully.

With so many grams of protein, I guarantee that these pancakes will keep you for being hungry at least 3 hours. They are nutritious, healthy and perfect for breakfast!

TIPS: I prefer to it them with crunchy peanut butter if i am on a cheat day.

With Love

Oana ♥
